  • 2 cups grated zucchini Fresh zucchini, grated
  • 1.5 cups all-purpose flour Sifted
  • 1 cup granulated sugar
  • 0.5 cup packed brown sugar Lightly packed
  • 0.5 cup vegetable oil
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.5 cup chopped nuts Optional
  • 0.5 cup chocolate chips Optional

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease your loaf pan lightly to prevent sticking.
  2. In a large bowl, combine the grated zucchini, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Mix well until fully combined.
  3. In another bowl, whisk together the all-purpose flour, baking soda, baking powder, salt, ground cinnamon, and ground nutmeg.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Fold in any optional nuts and chocolate chips if desired.
  5. Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
Baking
  1. Place the loaf pan in the preheated oven and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. Cover with aluminum foil if the top browns too much.
  2. Allow the bread to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.

Notes

Zucchini bread can be enjoyed warm with butter, cream cheese, or yogurt. It stores well in an airtight container and can be frozen for up to three months.
