Ingredients
  

Wet Ingredients
  • 6 large eggs
  • ½ cup full-fat Greek yogurt (unsweetened, plain)
  • ¼ cup melted butter or coconut oil Use your choice of fat.
Dry Ingredients
  • 1 tablespoon baking powder Ensure freshness for best results.
  • ¼ teaspoon salt
  • ½ teaspoon xanthan gum or psyllium husk powder
  • ½ cup finely ground almond flour (optional) For added flavor and nuttiness.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Line a loaf pan with parchment paper or grease it with butter or oil.
  3. In a large bowl, whisk together the eggs, Greek yogurt, and melted butter or coconut oil until smooth.
  4. Add the baking powder, salt, and xanthan gum or psyllium husk powder. If using almond flour, add it now. Mix until well combined.
Baking
  1. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  2. Bake in the preheated oven for about 35 to 45 minutes until the top is golden brown and a toothpick inserted in the center comes out clean.
  3. Let the bread cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing.

Notes

This bread can be served plain or with toppings. Try butter, cream cheese, or avocado for breakfast. Store in an airtight container for up to 3 days or freeze for up to a month.
