Preparation
- Preheat your oven to 350°F (175°C).
- Grease a 9×5-inch loaf pan with butter or cooking spray.
- In a large mixing bowl, mash the ripe bananas until smooth.
- Stir in the melted butter.
- Mix in the granulated sugar until well combined.
- Beat in the eggs one at a time and then stir in the vanilla extract.
- In another bowl, whisk together the flour, baking soda, salt, and optional spices.
- Gradually fold the dry ingredients into the wet banana mixture, being careful not to over-mix.
- If using, gently fold in the chopped nuts.
- Pour the batter into the prepared loaf pan.
Baking
- Bake in the preheated oven for 55 to 65 minutes or until a toothpick inserted into the center comes out clean.
- Allow the banana bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
Banana bread can be frozen for longer storage. Wrap it tightly in plastic wrap and then in aluminum foil.
