  • 1 lb ground beef Use lean ground beef for a healthier option.
  • 1 packet taco seasoning Follow package instructions for best flavor.
  • 1 can black beans Drained and rinsed.
  • 1 can corn Drained.
  • 1 cup diced tomatoes
  • 2 cups shredded cheese Cheddar or Mexican blend.
  • 4 cups Fritos Or similar corn chips.
  • 1 cup chopped lettuce
  • 1/2 cup diced onions
  • 1/2 cup sliced jalapeños Optional for spice.
  • to taste sour cream For serving.
  • to taste salsa For serving.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, cook the ground beef until it is browned (about 5-7 minutes), breaking it up as it cooks. Drain any excess fat.
  3. Add the taco seasoning to the browned meat and stir well to combine.
  4. In a large bowl, combine the seasoned beef, black beans, drained corn, diced tomatoes, and half of the shredded cheese. Mix until evenly distributed.
  5. In a baking dish, layer half of the Fritos, followed by the beef mixture, spreading it out evenly.
  6. Top with the remaining Fritos and sprinkle the rest of the cheese on top.
Cooking
  1. Bake the casserole in the preheated oven for 20-25 minutes until the cheese is melted and bubbly with slightly golden edges.
  2. Let it cool for a few minutes before serving hot. Allow each person to add their preferred toppings.

Notes

This dish can be stored in an airtight container in the refrigerator for 3-4 days. It can also be frozen in portions and reheated as needed. Customize toppings as desired.
