Ingredients
  

Cookie Base
  • 1 cup unsalted butter, softened Make sure the butter is softened for a fluffy texture.
  • 1 cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
Topping
  • 1 cup caramel candies Melt with heavy cream.
  • 2 tablespoons heavy cream Used to melt the caramel.
  • 1 cup milk chocolate chips Melted for drizzling over the cookies.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In another bowl, mix together the flour, baking powder, and salt. Gradually add this to the wet mixture till fully combined.
  5. Using a tablespoon or cookie scoop, drop portions of dough onto a lined baking sheet.
Baking
  1. Bake in the preheated oven for 10-12 minutes or until the edges are light golden brown.
Assembly
  1. Melt the caramel candies with heavy cream over low heat until smooth.
  2. Pour the warm caramel mixture over the tops of the baked cookies.
  3. Melt the milk chocolate chips and drizzle over the caramel layer.
  4. Let the cookies cool completely before serving.

Notes

You can serve these cookies warm with milk or ice cream. Store in an airtight container for fresh cookies up to 5 days.
