Ingredients
  

For the batter
  • 3 to 4 pieces ripe bananas, mashed Use very ripe bananas for the best flavor.
  • 1/2 cup melted butter Ensure butter is not too hot.
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract For additional flavor.
  • 1 and 1/2 cups all-purpose flour Measure accurately.
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 cup chopped walnuts or pecans Optional for added crunch.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
  2. In a large mixing bowl, mash the bananas until smooth.
  3. Pour in the melted butter and mix until fully incorporated.
  4. Add granulated sugar and eggs, then mix until smooth. Stir in vanilla extract.
  5. In a separate bowl, whisk in flour, baking soda, salt, cinnamon, and nutmeg.
  6. Gradually add dry ingredients to the wet mixture and mix gently until just combined.
  7. If using, fold in chopped walnuts or pecans.
  8. Pour batter into the prepared loaf pan and gently tap on the counter to release air bubbles.
Baking
  1. Bake in the preheated oven for 55 to 65 minutes. Check for doneness with a toothpick.
  2. Once done, let it cool in the pan for about 10 minutes before transferring to a wire rack.

Notes

Banana bread can also be made into French toast and is versatile for serving.
