  • 1 pound ground beef Use lean beef for a healthier option.
  • 1 onion, chopped
  • 1 can cream of mushroom soup Can substitute with vegetable cream soup for a vegetarian version.
  • 1 cup frozen mixed vegetables Fresh vegetables can be used if pre-cooked.
  • 2 cups shredded cheddar cheese Experiment with different cheese types for varied flavor.
  • 4 cups tater tots
  • to taste Salt and pepper

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, brown the ground beef along with the chopped onion until the beef is no longer pink, about 5 to 7 minutes. Drain excess fat.
  3. Stir in the cream of mushroom soup and frozen mixed vegetables. Season with salt and pepper to taste.
Assembly
  1. Grease a 9x13 inch baking dish and pour the beef mixture into it, spreading evenly.
  2. Sprinkle the shredded cheese over the beef layer.
  3. Arrange the tater tots evenly on top of the cheese.
Baking
  1. Bake in the preheated oven for about 30 to 35 minutes or until the tater tots are golden brown and the casserole is heated through.
Serving
  1. Let the casserole sit for a few minutes before cutting into portions. Serve warm.

Notes

Tater Tot Casserole can be customized with different vegetables or proteins. Store leftovers in the refrigerator for up to 3 days or freeze for 2-3 months.
