Ingredients
  

Meat and Vegetables
  • 2 pounds ground beef Use lean ground beef to reduce grease.
  • 1 medium onion, chopped
  • 1 can mixed vegetables (15 ounces) Feel free to use frozen or fresh veggies.
  • 1 can cream of mushroom soup (10.5 ounces) Can substitute with cream of chicken or cheese soup.
Toppings
  • 1 cup shredded cheddar cheese You can use mozzarella, pepper jack, or a cheese blend for different flavors.
  • 1 package tater tots (32 ounces) Cover the entire surface of the beef mixture.
  • to taste Salt and pepper Add additional seasonings like garlic powder or Italian herbs for more flavor.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, add the ground beef and chopped onion. Cook over medium heat until the meat is no longer pink, about 6 to 8 minutes. Drain any excess fat.
  3. Stir in the mixed vegetables and cream of mushroom soup. Season with salt and pepper to taste and mix well.
  4. Grease a 9x13 inch baking dish and spread the beef mixture evenly in the dish.
  5. Top the beef mixture with tater tots, covering the entire surface. Sprinkle shredded cheddar cheese on top.
Baking
  1. Bake for 30 to 35 minutes until the tater tots are golden brown and crispy.
  2. Let it cool for a few minutes before serving hot.

Notes

Tater Tot Casserole makes great leftovers; store in the refrigerator for 3 to 4 days or freeze for up to 2 months. Reheat in the microwave or oven.
