  • 4 cups fresh corn (or canned corn, drained) Fresh corn adds natural sweetness.
  • 1 cup sour cream
  • 1 cup cream-style corn
  • 1/2 cup honey
  • 1/2 cup butter, melted For greasing the dish.
  • 2 large eggs
  • 1 cup cornmeal
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease a baking dish thoroughly with butter or cooking spray.
  3. In a large bowl, combine fresh corn, sour cream, cream-style corn, honey, melted butter, and eggs, mixing until smooth.
  4. In another bowl, whisk together cornmeal, baking powder, salt, and black pepper.
  5. Gradually add the dry mixture to the wet mixture, stirring gently until blended.
  6. Pour the mixture into the prepared baking dish and smooth the top.
Baking
  1. Bake for 45-50 minutes until the top is golden brown and a toothpick inserted in the center comes out clean.
  2. Let it cool before serving.

Notes

For added flavor, drizzle extra honey on top before serving. Can be stored in the refrigerator for 3-4 days or frozen for longer storage.
