Preparation
- Preheat your oven to 350°F (175°C).
- Grease a baking dish thoroughly with butter or cooking spray.
- In a large bowl, combine fresh corn, sour cream, cream-style corn, honey, melted butter, and eggs, mixing until smooth.
- In another bowl, whisk together cornmeal, baking powder, salt, and black pepper.
- Gradually add the dry mixture to the wet mixture, stirring gently until blended.
- Pour the mixture into the prepared baking dish and smooth the top.
Baking
- Bake for 45-50 minutes until the top is golden brown and a toothpick inserted in the center comes out clean.
- Let it cool before serving.
Notes
For added flavor, drizzle extra honey on top before serving. Can be stored in the refrigerator for 3-4 days or frozen for longer storage.
