  • 0.5 cups unsalted butter, melted and cooled slightly
  • 0.25 cups vegetable oil
  • 0.75 cups granulated sugar
  • 2 large eggs, at room temperature
  • 1 teaspoon pure vanilla extract
  • 1.5 cups mashed ripe bananas (about 3-4 medium bananas)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9x5-inch loaf pan with butter or cooking spray and line the bottom with parchment paper.
Mix Ingredients
  1. In a small bowl, whisk together the flour, baking soda, and salt.
  2. In a large mixing bowl, mix together the melted butter, vegetable oil, and sugar. Add the eggs and vanilla extract, whisking until smooth.
  3. Mash the ripe bananas and stir them into the wet mixture.
  4. Gently stir the dry ingredients into the wet mixture until no dry spots remain.
  5. Fold in the chocolate chips.
Bake
  1. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  2. Bake for 50 to 60 minutes, checking at the 50-minute mark for doneness with a skewer or toothpick.
  3. If browning too quickly, cover loosely with aluminum foil.
  4. Let cool in the pan for 10 to 15 minutes before transferring to a wire rack to cool completely.

Notes

For added texture, consider adding 1/2 cup of chopped walnuts or pecans. You can also incorporate spices like cinnamon for extra flavor.
