Ingredients
  

For the Sugar Cookie Crust
  • 1.75 cups All-purpose flour
  • 0.5 tsp Baking soda
  • 0.5 tsp Salt
  • 0.75 cups Unsalted butter (room temperature)
  • 1 cups Regenerative Organic Certified® Cane Sugar from Wholesome
  • 1 tsp Pure vanilla extract
  • 1 large egg (room temperature)
  • 1 large egg yolk (room temperature)
  • 0.33 cups Christmas sprinkles (jimmies)
For the Cookie Dough Balls
  • 1.5 cups All-purpose flour
  • 0.5 cups Unsalted butter (room temperature)
  • 0.5 tsp Salt
  • 1 cups Regenerative Organic Certified® Cane Sugar from Wholesome
  • 5 TBSP Milk
  • 0.33 cups Christmas sprinkles (jimmies)
For the Cheesecake Filling
  • 32 oz Cream cheese (room temperature)
  • 0.67 cups Regenerative Organic Certified® Cane Sugar from Wholesome
  • 0.75 cups Sour cream (room temperature or Greek yogurt)
  • 0.5 cups Heavy cream (room temperature)
  • 1 tsp Pure vanilla extract
  • 4 large eggs (room temperature)
  • 0.67 cups Cookie dough balls (prepared earlier)
For the Ganache
  • 1 cup White chocolate chips
  • 0.33 cups Heavy cream

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together the flour, baking soda, and salt.
  3. In a large bowl, cream together the room-temperature butter and cane sugar until light and fluffy.
  4. Add in the vanilla, egg, and egg yolk, mixing well.
  5. Gradually combine the dry ingredients with the wet ingredients. Fold in the Christmas sprinkles.
  6. Press this mixture into the bottom of a baking pan and bake for 10-12 minutes until golden. Let it cool completely.
Prepare Cookie Dough Balls
  1. In one bowl, mix the flour and salt together.
  2. In another bowl, cream the butter and sugar.
  3. Add the vanilla and milk, mixing until combined.
  4. Gradually mix in the flour mixture, then stir in the Christmas sprinkles.
  5. Roll the mixture into small balls and refrigerate for 30 minutes.
Prepare Cheesecake Filling
  1. In a large bowl, beat the room-temperature cream cheese until smooth.
  2. Gradually add in the sugar, mixing consistently.
  3. Add the sour cream and heavy cream, followed by the vanilla.
  4. Beat in the eggs one at a time, avoiding overmixing.
Assemble the Cheesecake
  1. Pour the cheesecake filling over the cooled cookie crust.
  2. Carefully place the prepared cookie dough balls on top.
  3. Bake at 325°F (160°C) for about 50-60 minutes. The edges should be set, but the center will still be slightly jiggly.
  4. Allow it to cool before refrigerating for at least 4 hours.
Prepare White Chocolate Ganache
  1. Heat the heavy cream in a small pot until it begins to simmer.
  2. Remove from heat and add the white chocolate chips. Stir until smooth and let cool to thicken slightly.
Serve
  1. Slice your cheesecake into desired portions and drizzle the white chocolate ganache over the top.
  2. Optionally, sprinkle additional sprinkles for decoration.

Notes

For best results, use room temperature ingredients. This dessert can be made a day in advance and it’s perfect for parties.
