  • 2 Tablespoons Extra-virgin Olive Oil (or avocado oil)
  • 1 Medium Onion (diced)
  • 2-3 Cloves Garlic (minced)
  • 1 pound Lean Ground Beef
  • 1.5 Cups Cooked Brown Rice
  • 14.5 ounces Diced Tomatoes (one can)
  • 1 Tablespoon Tomato Paste
  • 1 Teaspoon Dried Oregano
  • 2 teaspoons Paprika see notes
  • Kosher salt and pepper (to taste)
Bell Peppers
  • 7 Large Bell Peppers (top and core removed)
Toppings
  • 1 Cup Shredded Cheddar Jack Cheese
  • Freshly chopped parsley (for garnish)

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers, remove the seeds and core, and place them cut side up in a baking dish.
Cooking the Filling
  1. Heat olive oil in a large pan over medium heat, add the diced onion and sauté until soft, about 4-5 minutes.
  2. Stir in minced garlic and cook for 1 additional minute.
  3. Add the ground beef to the pan and cook until browned, about 5-6 minutes.
  4. Mix in brown rice, canned tomatoes, tomato paste, oregano, and paprika, stirring well to combine. Cook until the sauce reduces slightly, around 4-5 minutes. Season with salt and pepper.
Filling and Baking
  1. Spoon the beef mixture into each bell pepper, filling them generously.
  2. Bake the peppers in the preheated oven for about 10-12 minutes until tender.
  3. Remove from oven and sprinkle with cheddar jack cheese; return to oven and bake for an additional 5-7 minutes until cheese is melted.
Serving
  1. Garnish the peppers with chopped parsley before serving.

Notes

For variations, try using ground turkey or chicken, add more vegetables, or make it vegetarian by substituting with beans.
