  • 2 cups cooked rice
  • 1 lb chicken breast, diced Ensure even size for uniform cooking.
  • 1/4 cup soy sauce Use gluten-free soy sauce for a gluten-free option.
  • 2 tbsp honey Maple syrup or agave syrup can be used as substitutes.
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 clove garlic, minced
  • 1 tsp ginger, grated
  • Green onions, sliced For garnish.
  • Sesame seeds For garnish.

Method
 

Preparation
  1. In a bowl, mix soy sauce, honey, sesame oil, rice vinegar, garlic, and ginger to make the sauce.
Cooking
  1. In a skillet, cook the diced chicken over medium heat until browned and cooked through.
  2. Pour the sauce over the chicken and simmer for 5-7 minutes until thickened.
Serving
  1. Serve the chicken over cooked rice and garnish with green onions and sesame seeds.

Notes

To store, place in an airtight container and refrigerate for up to 3 days. Reheat in microwave or stove. For extra flavor, marinate chicken in sauce for 30 minutes before cooking. For a spicy kick, add red pepper flakes or sriracha.
