Ingredients
  

For the Rice
  • 2 cups cooked jasmine rice
For the Chicken and Sauce
  • 1 lb chicken breast, diced
  • 1/4 cup soy sauce Low-sodium soy sauce works well for less salt.
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon garlic, minced Fresh garlic recommended.
  • 1 teaspoon ginger, minced Fresh ginger recommended.
  • 2 pieces green onions, sliced For garnishing.
  • Sesame seeds for garnish

Method
 

Preparation
  1. In a bowl, combine soy sauce, honey, rice vinegar, sesame oil, minced garlic, and minced ginger to create the sauce.
  2. Heat a skillet over medium heat and add oil. Once hot, add diced chicken and cook until browned and fully cooked, about 7 to 10 minutes.
  3. Pour the sauce over the cooked chicken and stir to coat. Cook for an additional 2 to 3 minutes until the sauce thickens.
  4. Serve the sticky chicken over bowls of cooked jasmine rice, and garnish with sliced green onions and sesame seeds.

Notes

You can add vegetables like broccoli or bell peppers for added nutrition. Store leftovers in airtight containers in the refrigerator for up to 3-4 days.
