Ingredients
  

Cookie Base
  • 1 cup unsalted butter, softened Make sure the butter is softened for easy blending.
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2.5 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
Candy Filling
  • Assorted Jolly Ranchers (or other hard candies), crushed Use different flavors and colors for variety.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy (2-3 minutes).
  3. Beat in the egg and then add the vanilla extract, stirring until well blended.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually mix the dry ingredients into the wet mixture until just combined.
  6. Sprinkle flour on your work surface, and roll out the dough to about 1/4 inch thick.
  7. Cut out shapes using cookie cutters, ensuring to cut out the center of each shape.
  8. Place the cut-out cookie shapes on a lined baking sheet and fill the centers with crushed candies.
  9. Bake for 8-10 minutes, or until the edges are lightly golden brown.
  10. Allow the cookies to cool completely on the baking sheet before serving.

Notes

Cookies can be stored in an airtight container at room temperature for up to one week. Use parchment paper between layers if stacking.
