Cookie Base
  • 2 1/2 cups all-purpose flour Provides structure for the cookies.

  • 1 cup unsalted butter, softened Gives the cookies their rich, creamy texture.
  • 1 cup granulated sugar Sweetens the cookies and helps them brown.
  • 1 large egg Acts as a binder for the ingredients.
  • 1 teaspoon vanilla extract Adds a delicious flavor.
Stained Glass Center
  • 1 cup crushed hard candies (like Jolly Ranchers) Forms the stained glass center; can use any colorful hard candy.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, mix flour, baking powder, and salt.
  3. In a larger bowl, cream the softened butter and granulated sugar until light and fluffy.
  4. Add the egg and vanilla extract to the creamed mixture and mix well.
  5. Gradually add the dry ingredients to the wet mixture, mixing on low speed until combined.
  6. Roll out the dough to about 1/4 inch thick on a floured surface.
  7. Cut out shapes with cookie cutters, making sure to cut a smaller shape in the center of each.
  8. Place crushed hard candies into the center of each cookie.
  9. Bake in the preheated oven for 10-12 minutes until the edges are lightly golden.
  10. Allow to cool on baking sheets for a few minutes before transferring to a wire rack.

Notes

Store cookies in an airtight container at room temperature for up to a week, or freeze for up to three months.
