Ingredients

  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
Wet Ingredients
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
Filling
  • 1 cup crushed hard candies (like Jolly Ranchers or Lifesavers) Use transparent candies for best results.

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In another bowl, cream the softened butter and granulated sugar together until light and fluffy.
  4. Beat in the egg and vanilla extract until well combined.
  5. Gradually add the dry mixture to the wet mixture, mixing just until the dough comes together.
  6. Shape the dough into small balls, flatten slightly, and cut out shapes from the center using cookie cutters.
  7. Place the cookies on a baking sheet lined with parchment paper and fill the cut-out centers with crushed hard candies.
Baking
  1. Bake in the preheated oven for about 8-10 minutes, or until the edges are golden brown.
  2. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature. Use parchment paper between layers to prevent sticking. They can also be frozen for later enjoyment.
