Ingredients
  

Main Ingredients
  • 2 cups cooked chicken, shredded Use leftover chicken for convenience.
  • 1 cup black beans, drained and rinsed Can use canned beans for ease.
  • 1 cup fire-roasted corn Canned or frozen corn works well.
  • 1 medium bell pepper, diced Any color bell pepper can be used.
Dressing Ingredients
  • 1 cup Greek yogurt For a creamy base.
  • 1 tablespoon lime juice Fresh lime juice is best.
  • 1 teaspoon chili powder Adjust for spiciness.
  • 1 teaspoon cumin
  • to taste Salt and pepper Adjust for personal preference.

Method
 

Preparation
  1. Shred the cooked chicken into small pieces.
  2. Drain and rinse the black beans well.
  3. Dice the bell pepper into bite-sized pieces.
Mix the Chicken Mixture
  1. In a large bowl, combine the shredded chicken, black beans, corn, and diced bell pepper.
  2. Use a big spoon to mix everything gently until evenly distributed.
Make the Yogurt Dressing
  1. In a separate bowl, take the Greek yogurt and add the lime juice, chili powder, cumin, salt, and pepper.
  2. Mix together until smooth.
Combine Everything
  1. Pour the yogurt dressing over the chicken mixture.
  2. Toss everything together to ensure the chicken and vegetables are well coated.
Serve or Store
  1. Serve the salad immediately or store it in an airtight container in the fridge.
