Dry Ingredients
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 tablespoon ground ginger
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon salt
Wet Ingredients
  • 3/4 cup unsalted butter, softened
  • 1/2 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1/2 cup unsulfured molasses

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper.
  3. In a large bowl, mix together the all-purpose flour, baking soda, ground ginger, ground cinnamon, ground cloves, and salt.
  4. In another bowl, cream together the softened unsalted butter, packed brown sugar, and granulated sugar until light and fluffy.
  5. Add the egg and molasses to the butter-sugar mixture and mix until combined.
  6. Gradually add the dry mixture to the wet ingredients, stirring gently until just combined.
  7. Drop balls of dough onto the prepared baking sheet, leaving space for spreading.
Baking
  1. Bake for 8-10 minutes until the edges are firm and the centers remain soft.
  2. Cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature for about a week. They can also be refrigerated for up to two weeks or frozen for up to three months.
