Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream the softened butter until light and fluffy.
  3. Gradually add the sugar to the creamed butter and mix until smooth.
  4. Slowly mix in the flour and salt until well combined.
  5. Stir in the vanilla extract.
  6. Roll the dough into 1-inch balls and place on a parchment-lined baking sheet.
  7. Create an indentation in each ball with your thumb or a spoon.
  8. Fill each indentation with a small spoonful of fruit preserves.
  9. Optionally roll some cookies in chopped nuts.
Baking
  1. Bake for 12-15 minutes until edges are lightly golden.
  2. Allow to cool on the baking sheet for a few minutes, then transfer to a wire rack.
  3. Dust with powdered sugar if desired.

Notes

Store leftover cookies in an airtight container. For longer storage, freeze in a single layer and then transfer to a freezer-safe bag.
