Preparation
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream the softened butter until light and fluffy.
- Gradually add the sugar to the creamed butter and mix until smooth.
- Slowly mix in the flour and salt until well combined.
- Stir in the vanilla extract.
- Roll the dough into 1-inch balls and place on a parchment-lined baking sheet.
- Create an indentation in each ball with your thumb or a spoon.
- Fill each indentation with a small spoonful of fruit preserves.
- Optionally roll some cookies in chopped nuts.
Baking
- Bake for 12-15 minutes until edges are lightly golden.
- Allow to cool on the baking sheet for a few minutes, then transfer to a wire rack.
- Dust with powdered sugar if desired.
Notes
Store leftover cookies in an airtight container. For longer storage, freeze in a single layer and then transfer to a freezer-safe bag.
