Ingredients
  

For the Cookie Dough
  • 1/2 cup unsalted butter, softened Use fresh unsalted butter for the best flavor.
  • 1 cup granulated sugar
  • 1 large egg Room temperature egg is preferable.
  • 1 tablespoon lemon zest (freshly grated lemon peel) Use the zest of fresh lemons for a brighter flavor.
  • 1/4 cup lemon juice (freshly squeezed) Freshly squeezed for the best flavor.
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • Powdered sugar for dusting Optional, but adds a nice finishing touch.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the softened butter and granulated sugar in a large mixing bowl until light and fluffy, about 2-3 minutes.
  3. Beat in the egg, lemon zest, lemon juice, and vanilla extract until well combined.
  4. In another bowl, whisk together the flour, baking soda, salt, and baking powder.
  5. Gradually add the dry mixture to the wet ingredients, mixing gently until just combined.
  6. Using a cookie scoop or tablespoon, drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
Baking
  1. Bake for 10-12 minutes until the edges are set and the tops are just starting to crack.
  2. Remove from the oven and let cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
  3. Optionally, dust with powdered sugar before serving.

Notes

Store cookies in an airtight container at room temperature for up to one week. For longer storage, freeze baked cookies in a single layer until solid, then transfer to a freezer-safe bag. Thaw at room temperature before enjoying.
