  • 4 oz Cream Cheese Use alternatives like Tofutti or Kite Hill for vegan option.
  • 1/3 cup Cotija Cheese Feta works as a great substitute if Cotija is unavailable.
  • 2 tablespoons Lime Juice Freshly squeezed for best flavor.
  • 2 cloves Garlic Minced; jarred minced garlic is a quick fix.
  • 1/2 tsp Chili Powder Add extra for more heat.
  • 1/2 tsp Smoked Paprika Adds a nice smokiness.
  • 1/2 tsp Onion Powder
  • Fresh Cilantro (Optional) For garnish.

Method
 

Preparation
  1. Place boneless chicken in the bottom of the slow cooker.
  2. Add the corn on top of the chicken.
  3. Cut cream cheese into chunks and add to the slow cooker along with Cotija cheese, lime juice, minced garlic, chili powder, smoked paprika, and onion powder.
  4. Stir gently to combine, ensuring chicken is well coated.
Cooking
  1. Cover the slow cooker and cook on low for about 6-8 hours or on high for 3-4 hours, until chicken is fully cooked and tender.
  2. Once cooked, shred the chicken with two forks and return to the slow cooker; stir to mix evenly.
Garnishing
  1. Top with fresh cilantro if desired.

Notes

Great for meal prepping; lasts up to 4 days in the fridge or 3 months in the freezer. To make extra flavorful, consider adding onions or bell peppers while cooking.
