For the Macarons

  • 4 grams egg white powder (optional) Helps stabilize the egg whites for better results.
  • 100 grams egg whites Primary ingredient for meringue.
  • 105 grams almond flour Gives macarons their unique nutty flavor.
  • 105 grams Domino® Powdered Sugar Used to make a smooth batter.
  • 2 drops black gel food coloring For Santa's eyes.
  • 1 drop yellow gel food coloring For Santa's belt.
  • 1 tablespoon meringue powder Adds stability to the meringue.
  • 4 tablespoons water Used to create royal icing.
  • 187 grams Domino® Powdered Sugar For royal icing decoration.
  • 63 grams all-purpose flour Helps give structure to decorations.
For the Buttercream Filling
  • 113 grams unsalted butter Provides creaminess to the filling.
  • 50 grams Domino® Golden Sugar Adds sweetness to the filling.
  • 156 grams Domino® Powdered Sugar For the smooth texture of buttercream.
  • 1 teaspoon vanilla extract Flavor enhancer.
  • 1/8 teaspoon almond extract Adds a delightful nutty flavor.
  • 1/2 tablespoon milk or heavy cream Aids in achieving perfect buttercream consistency.
  • 50 grams desiccated coconut Adds a sweet texture to the buttercream.

Method
 

Preparation
  1. Preheat your oven to 300°F (150°C).
  2. Line a baking sheet with parchment paper.
  3. In a mixing bowl, sift together almond flour and Domino® Powdered Sugar.
Making the Macarons
  1. Whip egg whites until soft peaks form.
  2. Gradually add Domino® Golden Sugar and whip until stiff peaks form.
  3. Add black and yellow gel food coloring and mix gently.
  4. Fold in sifted almond flour and powdered sugar until a 'lava-like' consistency is achieved.
  5. Pipe small circles onto the baking sheet.
  6. Let rest for 30 minutes to form a crust.
  7. Bake for 15-20 minutes, monitoring closely.
  8. Allow cooling before removing from baking sheet.
Making the Buttercream
  1. Cream unsalted butter, Golden Sugar, and Domino® Powdered Sugar together until smooth.
  2. Add vanilla and almond extract to the mixture and stir to combine.
  3. Stir in desiccated coconut for added flavor and texture.
Assembly
  1. Assemble macarons by pairing shells with buttercream filling.
  2. Decorate with royal icing.
  3. Serve and enjoy!
