Preparation
- Preheat your oven to 300°F (150°C).
- Line a baking sheet with parchment paper.
- In a mixing bowl, sift together almond flour and Domino® Powdered Sugar.
Making the Macarons
- Whip egg whites until soft peaks form.
- Gradually add Domino® Golden Sugar and whip until stiff peaks form.
- Add black and yellow gel food coloring and mix gently.
- Fold in sifted almond flour and powdered sugar until a 'lava-like' consistency is achieved.
- Pipe small circles onto the baking sheet.
- Let rest for 30 minutes to form a crust.
- Bake for 15-20 minutes, monitoring closely.
- Allow cooling before removing from baking sheet.
Making the Buttercream
- Cream unsalted butter, Golden Sugar, and Domino® Powdered Sugar together until smooth.
- Add vanilla and almond extract to the mixture and stir to combine.
- Stir in desiccated coconut for added flavor and texture.
Assembly
- Assemble macarons by pairing shells with buttercream filling.
- Decorate with royal icing.
- Serve and enjoy!
