Ingredients
  

For the Cookie Dough
  • 1 cup unsalted butter, softened Ensure it is at room temperature
  • 1 cup brown sugar Packed
  • 1/2 cup granulated sugar
  • 2 large eggs Room temperature
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
For the Cheesecake Filling
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
For Assembly
  • 1/4 cup salted caramel sauce For drizzling on top

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  2. In a large mixing bowl, cream the softened butter, brown sugar, and granulated sugar until light and fluffy, about 3-5 minutes.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In another bowl, whisk together the all-purpose flour, baking soda, and salt.
  5. Gradually add the dry mixture to the butter mixture and mix until just combined.
  6. In a separate bowl, beat the softened cream cheese with powdered sugar until smooth.
Baking
  1. Drop spoonfuls of the cookie dough onto the prepared baking sheets, leaving space for spreading.
  2. Place a dollop of the cream cheese mixture on top of each dough mound and swirl gently.
  3. Drizzle with salted caramel sauce.
  4. Bake for 10-12 minutes or until the edges are golden brown.
  5. Let the cookies cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.

Notes

For best results, serve the cookies warm. You can also consider adding chocolate chips or nuts for a variation.
