Preparation
- Preheat your oven to 350°F (175°C).
- Line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt.
- In a larger bowl, mix the granulated sugar, brown sugar, and vegetable oil until smooth.
- Add the eggs one at a time to the sugar mixture, mixing well after each addition, then stir in vanilla extract and red food coloring.
- Gradually mix the dry ingredients into the wet mixture until just combined.
- Chill the dough in the refrigerator for about 30 minutes.
- Roll tablespoon-sized portions of the dough into balls and coat them in powdered sugar.
- Place the coated dough balls on the prepared baking sheet, leaving space between them.
Baking
- Bake in preheated oven for 10-12 minutes until edges are set and centers remain soft.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
Store cooled cookies in an airtight container at room temperature for up to a week. For long-term storage, freeze cookies for up to three months.
