Ingredients
  

Main Ingredients
  • 1 cup unsalted butter, softened Make sure butter is at room temperature.
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1 cup chopped apples (peeled and cored) Fresh apples are recommended.
Rolling Mixture
  • 1/4 cup sugar For rolling.
  • 1 tablespoon ground cinnamon For rolling.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar with a mixer until smooth and fluffy.
  3. Beat in the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In another bowl, mix together the flour, baking soda, salt, and ground cinnamon.
  5. Gradually add the dry ingredients to the butter mixture and mix until combined.
  6. Gently fold in the chopped apples ensuring they are evenly distributed.
  7. In a small bowl, combine the sugar and ground cinnamon for rolling.
Baking
  1. Scoop dough portions using a tablespoon or cookie scoop, roll into balls, and coat in the cinnamon-sugar mixture.
  2. Place dough balls on the prepared baking sheet, slightly flattening each one and leaving enough space between them.
  3. Bake for 10-12 minutes, until the edges are golden brown and the centers remain soft.
  4. Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Best enjoyed warm with a cup of coffee or tea. Can be served with caramel sauce or vanilla ice cream for extra indulgence. Store in an airtight container at room temperature for up to a week, or freeze for up to three months.
