Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar with a mixer until smooth and fluffy.
- Beat in the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- In another bowl, mix together the flour, baking soda, salt, and ground cinnamon.
- Gradually add the dry ingredients to the butter mixture and mix until combined.
- Gently fold in the chopped apples ensuring they are evenly distributed.
- In a small bowl, combine the sugar and ground cinnamon for rolling.
Baking
- Scoop dough portions using a tablespoon or cookie scoop, roll into balls, and coat in the cinnamon-sugar mixture.
- Place dough balls on the prepared baking sheet, slightly flattening each one and leaving enough space between them.
- Bake for 10-12 minutes, until the edges are golden brown and the centers remain soft.
- Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
Best enjoyed warm with a cup of coffee or tea. Can be served with caramel sauce or vanilla ice cream for extra indulgence. Store in an airtight container at room temperature for up to a week, or freeze for up to three months.
