Preparation
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, mix together the flour, sugar, baking powder, baking soda, salt, and pumpkin pie spice.
- In another bowl, whisk together the vegetable oil, canned pumpkin puree, eggs, and vanilla extract.
- Combine the wet and dry ingredients and stir gently until just mixed.
- Fold in nuts if you're using them.
- Fill each muffin cup about two-thirds full with batter.
Baking
- Bake for 18 to 20 minutes, checking for doneness with a toothpick.
- Allow muffins to cool in the tin for 5 minutes before transferring to a wire rack.
