  • 1.5 cups all-purpose flour
  • 1 cup sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 teaspoon pumpkin pie spice
Wet Ingredients
  • 0.5 cups vegetable oil
  • 1 cup canned pumpkin puree
  • 2 large eggs
  • 1 teaspoon vanilla extract
Optional Add-ins
  • 0.5 cups chopped nuts e.g., walnuts or pecans

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the flour, sugar, baking powder, baking soda, salt, and pumpkin pie spice.
  3. In another bowl, whisk together the vegetable oil, canned pumpkin puree, eggs, and vanilla extract.
  4. Combine the wet and dry ingredients and stir gently until just mixed.
  5. Fold in nuts if you're using them.
  6. Fill each muffin cup about two-thirds full with batter.
Baking
  1. Bake for 18 to 20 minutes, checking for doneness with a toothpick.
  2. Allow muffins to cool in the tin for 5 minutes before transferring to a wire rack.
