Method
Mix the Dough
- In a stand mixer bowl, combine the flour, sugar, instant yeast, warm milk, melted butter, and salt. Use the dough hook to mix on medium speed for about 4 to 5 minutes until smooth.
Let the Dough Rise
- Cover the bowl with a towel and let it sit in a warm place for 30 to 60 minutes until it doubles in size.
Preheat and Prepare
- While the dough is rising, preheat the oven to 450°F and line two baking sheets with parchment paper. Bring 9 cups of water to a boil in a large pot and add ½ cup of baking soda.
Shape the Pretzel Bites
- Punch down the risen dough to release air, divide into 12 pieces, roll each piece into a ¾ inch thick rope, and cut into 1 to 2-inch bites.
Boil the Bites
- Drop the bites into the boiling water and cook for about 30 seconds. Transfer to the prepared baking sheets.
Finish and Bake
- Brush the bites with the egg wash and sprinkle with salt. Bake for about 12 to 14 minutes until golden brown.
Serve
- Let the baked bites cool slightly and serve warm with your choice of dipping sauces.
