Ingredients
  

Salad Base
  • 1 ripe pineapple, diced Choose a ripe pineapple for the best flavor.
  • 2 cups cucumbers, diced Use fresh cucumbers for optimal taste.
Dressing
  • 1/4 cup fresh lime juice Freshly squeezed is recommended.
  • 1 tablespoon honey (optional) Adjust sweetness to preference.
  • Salt and pepper to taste Season according to your preference.
Garnish
  • Fresh cilantro or mint Use for garnish just before serving.

Method
 

Preparation
  1. Chop the ripe pineapple into small, bite-sized pieces.
  2. Dice the cucumbers.
  3. Place the diced pineapple and cucumbers into a large mixing bowl.
Preparation of Dressing
  1. In a small bowl, whisk together fresh lime juice and honey (if using).
Combine
  1. Pour the dressing over the bowl of pineapple and cucumbers.
  2. Toss gently to coat all pieces with dressing.
Seasoning and Chilling
  1. Add salt and pepper to taste and adjust as needed.
  2. Cover the bowl and place in the refrigerator for at least 30 minutes.
Serving
  1. Remove salad from the fridge and garnish with fresh cilantro or mint.
  2. Serve in small bowls or on plates, as a side dish or light meal.

Notes

For the best flavor and texture, store salad in an airtight container in the refrigerator. Best enjoyed within 24 hours. Garnish just before serving to keep herbs fresh.
