  • 2 large boneless, skinless chicken breasts
  • 1 cup fresh basil pesto store-bought or homemade
  • 4 pieces flatbread store-bought or homemade
  • 1 cup shredded mozzarella cheese
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste
  • Fresh basil leaves for garnish (optional)

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Pat the chicken breasts dry with paper towels and season with salt and pepper.
  3. Heat olive oil in a large skillet over medium-high heat, then cook the seasoned chicken breasts for 6-7 minutes on each side, ensuring they are no longer pink in the center.
  4. Remove chicken from the skillet and let it rest for 5 minutes before slicing it into thin strips.
Assembly
  1. Lay the flatbreads on a baking sheet and spread a layer of basil pesto on each.
  2. Place the sliced chicken evenly over the pesto-covered flatbreads.
  3. Sprinkle shredded mozzarella cheese over the chicken, followed by halved cherry tomatoes and grated Parmesan cheese.
Cooking
  1. Bake the flatbreads in the preheated oven for 10-12 minutes until the cheese is melted and bubbly.
  2. For extra crispiness, use the broiler for the last 1-2 minutes of cooking, watching closely to prevent burning.
  3. Once done, let the flatbreads cool for a minute before slicing into pieces. Garnish with fresh basil leaves if desired.

Use fresh ingredients for the best flavor. Feel free to customize toppings and use a meat thermometer to ensure chicken is cooked through.
