  • 1/2 cup powdered sugar
  • 1/4 teaspoon salt Reduce if using salted butter.
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon peppermint extract Adjust amount for a stronger flavor.
  • 2 cups all-purpose flour
  • 1/2 cup crushed candy canes Use a ziplock bag and a rolling pin to crush.
  • additional for dusting powdered sugar Dust after cooling for a snowy appearance.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the softened butter and powdered sugar until smooth and fluffy.
  3. Stir in the vanilla and peppermint extracts until well combined.
  4. Gradually add in the all-purpose flour, mixing gently to combine.
  5. Fold in the crushed candy canes until evenly distributed in the dough.
  6. Scoop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
Baking
  1. Bake for 10-12 minutes or until the edges are lightly golden.
  2. Allow cookies to cool slightly before transferring to a wire rack.
  3. Dust the cooled cookies with additional powdered sugar before serving.

These cookies are great for gifting or serving at holiday parties. Store in an airtight container at room temperature for up to a week or freeze for up to three months.
