Ingredients

  • 12 oz penne or rotini pasta
  • 14 oz kielbasa sausage, sliced
  • 1 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 small onion, chopped
  • 2 cups chicken broth (low sodium)
  • 1 cup heavy cream
  • 3/4 cup grated Parmesan cheese
  • 1 1/2 cups shredded cheddar or mozzarella cheese
  • to taste Salt and pepper
  • 1/2 tsp smoked paprika (optional)
  • Fresh parsley (for garnish)

Method
 

Preparation
  1. In a large pot, heat olive oil over medium heat.
  2. Add the kielbasa and cook for 4–5 minutes until browned.
  3. Add garlic and onion; sauté for 2 minutes until fragrant and the onion is translucent.
  4. Pour in the chicken broth and heavy cream; bring to a light simmer.
Cooking
  1. Add the pasta; stir, cover, and simmer for 10–12 minutes, stirring occasionally until the pasta is al dente.
  2. Stir in the Parmesan cheese until melted and the sauce is creamy.
  3. Then, add the cheddar or mozzarella cheese and stir until melted.
  4. Season with salt, pepper, and smoked paprika if using.
  5. Garnish with fresh parsley and serve hot; you can also top it with extra grated Parmesan if you like.

Notes

For added flavor, let the kielbasa get a nice brown before adding other ingredients. Feel free to incorporate seasonal vegetables like spinach or peas for extra nutrition and color. Adjust the cheese types or amounts based on your preference—mix it up with different cheeses!
