  • 2 cups whole milk
  • 1.5 cups water or broth Use low-sodium broth if preferable.
  • 8 oz pasta of your choice Whole wheat or gluten-free options work well.
  • 8-10 oz broccoli, finely chopped Fresh or frozen broccoli can be used.
  • 2 cups shredded extra sharp cheddar cheese Substitute with mozzarella or gouda if desired.
  • 1/4 cup plain Greek-style yogurt For added creaminess.
  • 1 tbsp butter or ghee Optional, for extra richness.

Method
 

Preparation
  1. Boil the milk and water/broth in a large pot over high heat.
  2. Once boiling, add the pasta and stir gently.
  3. Reduce heat to a simmer and cover, cooking for about 10 minutes, stirring occasionally.
  4. After 10 minutes, add the chopped broccoli and cook for another 2-3 minutes.
  5. Remove from heat and stir in the cheddar cheese, Greek yogurt, and optional butter until melted and creamy.
Serving
  1. Serve hot, optionally garnishing with fresh herbs, extra cheese, or crushed red pepper flakes.

Notes

Store leftovers in an airtight container for up to 3 days. Reheat in the microwave, adding a splash of milk or broth if needed.
