Method
 

Cooking Steps
  1. Heat a large pot over medium heat. Add the ground turkey and cook, breaking it apart until no pink bits remain, about 5-7 minutes.
  2. Add the chopped onion and minced garlic to the pot. Cook for 3-4 minutes until the onion becomes translucent.
  3. Stir in diced tomatoes (with juice), chicken broth, orzo, Italian seasoning, salt, and pepper. Mix well.
  4. Increase heat to medium-high and bring to a boil. Once boiling, reduce heat to a simmer and cover. Cook for 10-12 minutes, or until the orzo is tender.
  5. Add the packed spinach and stir until wilted, about 2 minutes.
  6. Remove from heat and serve hot, optionally garnished with grated Parmesan cheese.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 2 months. Reheat thoroughly before serving.
