Preparation
- In a small bowl, mix together the Italian seasoning, paprika, salt, and pepper.
- Pat the chicken dry with a paper towel and rub the seasoning mixture on both sides of the chicken breasts.
Cooking the Chicken
- Heat a large pan over medium heat and add the avocado oil (or olive oil).
- Once hot, add the seasoned chicken and cook for 3-5 minutes on each side until golden and cooked through. Remove from the pan and let rest.
Onion and Garlic Preparation
- Add unsalted butter to the pan, then add diced yellow onion. Cook until soft, about 3 minutes.
- Add minced garlic and cook for another minute until fragrant.
Cooking the Pasta
- Pour in the chicken broth to deglaze the pan, scraping up any browned bits.
- Once boiling, add the dry penne pasta and stir. Cover and cook on low heat for about 10 minutes, stirring occasionally.
Creating the Sauce
- Turn off the heat and stir in the Parmesan cheese and heavy cream until combined.
Combining and Serving
- Slice the cooked chicken into strips and return to the pan. Toss gently with pasta and sauce.
