Preparation
- Preheat your oven to 350°F (175°C).
- Grease your baking dish with butter or cooking spray.
- In a large mixing bowl, whisk the eggs until well beaten.
- Add the milk, maple syrup (or honey), and vanilla extract to the eggs, whisking until combined.
- Next, add the oats, baking powder, cinnamon, and salt to the wet mixture and stir until well mixed.
- Gently fold in the diced apples and nuts if using.
- Pour the mixture into the prepared baking dish and spread it out evenly.
Baking
- Place the dish in the preheated oven and bake for 30-35 minutes until golden brown and set in the center.
- Let it cool for about 5 minutes before slicing.
Serving
- Serve warm, optionally adding extra maple syrup, nuts, or yogurt.
Notes
Store leftovers in an airtight container in the fridge for up to 4-5 days or freeze portions for longer storage. To reheat, thaw in the fridge overnight and warm in the oven or microwave.
