Wet Ingredients
  • 1 1/2 cups milk (almond milk for dairy-free) Liquid base for the bake.
  • 2 large eggs Binder for the mixture.
  • 1 tsp vanilla extract Adds flavor.
Fruits and Nuts
  • 1 large apple, diced Provides natural sweetness and moisture.
  • 1/4 cup chopped walnuts or pecans (optional) For added protein and healthy fats.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease your baking dish with butter or cooking spray.
  3. In a large mixing bowl, whisk the eggs until well beaten.
  4. Add the milk, maple syrup (or honey), and vanilla extract to the eggs, whisking until combined.
  5. Next, add the oats, baking powder, cinnamon, and salt to the wet mixture and stir until well mixed.
  6. Gently fold in the diced apples and nuts if using.
  7. Pour the mixture into the prepared baking dish and spread it out evenly.
Baking
  1. Place the dish in the preheated oven and bake for 30-35 minutes until golden brown and set in the center.
  2. Let it cool for about 5 minutes before slicing.
Serving
  1. Serve warm, optionally adding extra maple syrup, nuts, or yogurt.

Notes

Store leftovers in an airtight container in the fridge for up to 4-5 days or freeze portions for longer storage. To reheat, thaw in the fridge overnight and warm in the oven or microwave.
