  • 3 pieces ripe bananas Choose bananas with plenty of brown spots for maximum flavor.
  • 2 cups flour All-purpose flour is preferred.
  • 1 cup sugar
  • ½ cup butter Melted.
  • 2 pieces eggs Beaten.
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract optional

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Mash the 3 ripe bananas in a bowl until mostly smooth with some lumps.
  3. Melt ½ cup of butter and combine it with the mashed bananas and 1 cup of sugar.
  4. In a separate bowl, beat 2 eggs then stir them into the banana mixture.
  5. In another bowl, whisk together 2 cups of flour, 1 teaspoon of baking soda, and ½ teaspoon of salt.
  6. Fold the dry ingredients into the wet mixture until just combined, being careful not to overmix.
  7. Grease a loaf pan and pour the batter into it.
  8. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  9. Let the banana bread cool in the pan for 10-15 minutes before transferring it to a wire rack.

Notes

Store banana bread wrapped in plastic wrap or aluminum foil at room temperature for 2-3 days or freeze for up to three months. Thaw slices at room temperature or warm in the microwave.
