Preparation
- Preheat your oven to 350°F (175°C).
- Mash the 3 ripe bananas in a bowl until mostly smooth with some lumps.
- Melt ½ cup of butter and combine it with the mashed bananas and 1 cup of sugar.
- In a separate bowl, beat 2 eggs then stir them into the banana mixture.
- In another bowl, whisk together 2 cups of flour, 1 teaspoon of baking soda, and ½ teaspoon of salt.
- Fold the dry ingredients into the wet mixture until just combined, being careful not to overmix.
- Grease a loaf pan and pour the batter into it.
- Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
- Let the banana bread cool in the pan for 10-15 minutes before transferring it to a wire rack.
Notes
Store banana bread wrapped in plastic wrap or aluminum foil at room temperature for 2-3 days or freeze for up to three months. Thaw slices at room temperature or warm in the microwave.
