Preparation

- Roll out the pie crust or puff pastry and cut small circles to fit into the muffin cups.
- In a large mixing bowl, combine chopped pecans, brown sugar, corn syrup, melted butter, eggs, vanilla extract, and salt. Stir until smooth.
Assembly and Baking
- Place the pie crust rounds into the prepared muffin tin and fill each with the pecan mixture, being careful not to overfill.
- Bake for 20-25 minutes or until the filling is set and the crust is golden brown.
- Allow the pies to cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.
Notes
Serve the mini pecan pies on a decorative platter. They can be enhanced with toppings like whipped cream, ice cream, or drizzles of chocolate or caramel.
