Ingredients
  

For the pie filling
  • 1 cup pecans, chopped Use fresh pecans for better flavor
  • 1 cup brown sugar
  • 1/2 cup corn syrup Can be substituted with maple syrup for variation
  • 1/4 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
For the crust
  • 1 package pie crust or puff pastry (1 sheet) Store-bought is acceptable

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a muffin tin.
  2. Roll out the pie crust or puff pastry and cut small circles to fit into the muffin cups.
  3. In a large mixing bowl, combine chopped pecans, brown sugar, corn syrup, melted butter, eggs, vanilla extract, and salt. Stir until smooth.
Assembly and Baking
  1. Place the pie crust rounds into the prepared muffin tin and fill each with the pecan mixture, being careful not to overfill.
  2. Bake for 20-25 minutes or until the filling is set and the crust is golden brown.
  3. Allow the pies to cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

Serve the mini pecan pies on a decorative platter. They can be enhanced with toppings like whipped cream, ice cream, or drizzles of chocolate or caramel.
