  • 1 medium spaghetti squash Choose a firm, healthy squash.
  • 2 cups marinara sauce Store-bought or homemade.
  • 1 cup ricotta cheese Can be substituted with cottage cheese for a lighter option.
  • 1 cup shredded mozzarella cheese Use part-skim for a healthier version.
  • 1/2 cup grated Parmesan cheese For best flavor, use freshly grated.
Seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper Adjust according to preference.
Garnish
  • to taste Fresh basil For garnish before serving.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  2. Brush the insides with olive oil and season with salt and pepper. Place cut-side down on a baking sheet and roast for about 30-40 minutes until tender.
Mixing
  1. In a bowl, mix ricotta cheese, garlic powder, Italian seasoning, and some salt and pepper.
  2. Once the squash is cooked, scrape the insides with a fork to create spaghetti-like strands.
  3. Mix the squash strands with the marinara sauce and ricotta mixture.
Baking
  1. Top with mozzarella and Parmesan cheese.
  2. Bake in the oven for an additional 15-20 minutes until the cheese is bubbly and golden.
  3. Garnish with fresh basil before serving.

Notes

Make sure to cook the spaghetti squash until it is tender. Adjust the seasoning to your taste. You can add more garlic powder or Italian seasoning for bolder flavors. Feel free to mix in sautéed vegetables like spinach or bell peppers for added texture.
