Method
Make the Glaze
- In a bowl, mix together ½ cup ketchup, 1 tablespoon Worcestershire sauce, brown sugar, garlic powder, and onion powder. Set aside.
Prepare the Meatloaf Mixture
- In a large bowl, combine dried breadcrumbs, grated onion, 2 tablespoons ketchup, 1 tablespoon Worcestershire sauce, dijon mustard, minced beef, eggs, minced garlic, herbs, parsley, salt, beef stock powder, and black pepper. Mix everything well until fully combined.
Shape the Meatloaf
- Shape the meat mixture into a loaf and place it in a baking dish or on a lined baking sheet.
Add the Glaze
- Pour the prepared glaze over the top of the meatloaf, spreading it evenly.
Bake
- Bake in a preheated oven at 350°F (175°C) for about 1 hour or until the meatloaf is cooked through and the glaze is caramelized.
Serve
- Let the meatloaf cool slightly before slicing.
Notes
Avoid using extra-lean beef as it can make the meatloaf dry. Grating the onion helps to incorporate moisture and flavor throughout the meatloaf. To prevent cracking, do not overmix the meat mixture. You can customize the meatloaf by adding diced vegetables like bell peppers or zucchini for extra nutrition. For a spicier version, add a dash of hot sauce to the glaze.
