Preparation
- Preheat the oven to 350°F (175°C).
- Crush the maple sandwich cookies into fine crumbs. Melt the unsalted butter and mix with the crumbs to form a crust. Press into a deep-dish pie pan.
- In a large bowl, mix the pumpkin puree, heavy cream, brown sugar, eggs, vanilla extract, pumpkin pie spice, and salt until smooth.
- Pour the pumpkin mixture into the prepared crust, spreading it evenly.
Baking
- Bake the pie in the preheated oven for 50-60 minutes, until the filling is set.
- Cool on a wire rack for at least an hour before serving.
Notes
Serve with whipped cream or vanilla ice cream. For storage, cover and refrigerate leftovers for up to a week or freeze for up to 3 months. Allow to thaw overnight in the refrigerator before serving.
