- Wash the zucchinis thoroughly, cut off the ends, and slice them into thin strips.
- In a shallow bowl, whisk the eggs until well combined.
- In another bowl, mix the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper.
- Dip each zucchini strip into the egg mixture and then into the breadcrumb mixture, coating evenly.
- Preheat the air fryer to 400°F (200°C) for about 5 minutes.
Cooking
- Lightly spray the air fryer basket with cooking spray and place the breaded zucchini fries in a single layer.
- Cook for 8 to 10 minutes, flipping halfway through to ensure even browning.
Serving
- Carefully remove the zucchini fries from the air fryer and let them cool for a minute.
- Serve hot with your choice of dipping sauces or as a side dish.
Notes
Store leftovers in an airtight container in the refrigerator for 2-3 days or freeze for up to 2 months. Reheat in the air fryer at 350°F (175°C) for 5-7 minutes to revive crispiness.
