Ingredients
  

For the Zucchini Fries
  • 2 medium zucchini Fresh and firm zucchinis work best.
  • 1 cup breadcrumbs Choose whole wheat or panko for extra crunch.
  • 1/2 cup grated Parmesan cheese Optional; adds cheesy flavor.
  • 2 large eggs Helps breadcrumbs stick to zucchini.
  • 1 teaspoon garlic powder Adds savory taste.
  • 1 teaspoon onion powder Enhances flavor.
  • 1/2 teaspoon paprika For smokiness and color.
  • to taste salt and pepper Essential for flavor.
  • as needed cooking spray or oil Light coat helps with crisping.

Method
 

Preparation
  1. Wash the zucchinis thoroughly, cut off the ends, and slice them into thin strips.
  2. In a shallow bowl, whisk the eggs until well combined.
  3. In another bowl, mix the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper.
  4. Dip each zucchini strip into the egg mixture and then into the breadcrumb mixture, coating evenly.
  5. Preheat the air fryer to 400°F (200°C) for about 5 minutes.
Cooking
  1. Lightly spray the air fryer basket with cooking spray and place the breaded zucchini fries in a single layer.
  2. Cook for 8 to 10 minutes, flipping halfway through to ensure even browning.
Serving
  1. Carefully remove the zucchini fries from the air fryer and let them cool for a minute.
  2. Serve hot with your choice of dipping sauces or as a side dish.

Notes

Store leftovers in an airtight container in the refrigerator for 2-3 days or freeze for up to 2 months. Reheat in the air fryer at 350°F (175°C) for 5-7 minutes to revive crispiness.
