Method
 

Preparation
  1. Combine the rolled oats, peanut butter or almond butter, honey or maple syrup, lemon juice, lemon zest, salt, and vanilla extract in a large bowl. Mix until well combined.
  2. Form small balls from the mixture using your hands, or press it into a lined baking dish to create bars.
  3. Refrigerate the shaped cookies for about 30 minutes to firm up.
  4. After chilling, enjoy the cookies as a snack, dessert, or breakfast.

Notes

Store in an airtight container in the refrigerator for up to a week. Freeze individual cookies for longer storage (1-2 months).
