  • 1 box lemon cake mix (15.25 oz)
  • 1 can lemon pie filling (21 oz)
  • 8 oz cream cheese, softened Make sure the cream cheese is softened for better mixing.
  • 1/2 cup butter, melted (1 stick) Do not stir after drizzling.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 9×13 inch baking dish by greasing it with butter or non-stick spray.
Assembly
  1. Spread the lemon pie filling evenly in the bottom of the prepared baking dish.
  2. Cut the softened cream cheese into small cubes and scatter them over the lemon pie filling.
  3. Evenly sprinkle the dry lemon cake mix over the top of the cream cheese layer.
  4. Drizzle the melted butter over the cake mix without stirring.
Baking
  1. Place the baking dish in the oven and bake for about 40 minutes, until edges are bubbly and the top is golden.
  2. Let the cake rest for about 5 minutes before serving.

Notes

Serve warm, chilled, or at room temperature. Pair with vanilla ice cream or whipped cream. For variations, try adding lemon zest or blueberries.
