Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine ¼ cup of honey, 3 tablespoons of gochujang, 3 finely minced cloves of garlic, ½ teaspoon of salt, and ¼ teaspoon of black pepper. Stir until well combined.
  3. Add the chicken thighs to the marinade, ensuring each piece is coated evenly. Marinate for at least 30 minutes or overnight for enhanced flavor.
  4. Line a baking sheet with parchment paper.
  5. Place the marinated chicken thighs on the baking sheet, ensuring they are not touching.
Baking
  1. Bake the chicken for about 25-30 minutes, checking that the internal temperature reaches 165°F (75°C).
  2. Remove from the oven and let the chicken rest for a few minutes before serving.
  3. Serve the chicken hot with rice or vegetables.

Notes

Adjust the spice level by altering the amount of gochujang. Longer marination enhances flavor. Can substitute with different chicken cuts or for a vegetarian option, use tofu or hearty vegetables.
