Ingredients
  

Main Ingredients
  • 1 lb thinly sliced ribeye or sirloin beef Choose high-quality meat for the best flavor.
  • 8 oz provolone cheese, sliced Can substitute with cheddar or mozzarella.
  • 1 cup mixed bell peppers, chopped (red, green, or yellow) Customize with your favorite peppers.
  • 1 medium sweet onion, chopped
  • 2 tbsp extra virgin olive oil
  • 4 pieces low-carb tortillas Can substitute with lettuce wraps.

Preparation
  1. Gather and prep all ingredients including chopping bell peppers and onion.
Cooking the Vegetables
  1. In a skillet, heat olive oil over medium heat. Add chopped onions and bell peppers. Sauté for 5-7 minutes until softened.
Cooking the Beef
  1. Increase heat to medium-high and add the beef, seasoning with salt and pepper. Cook for about 3-5 minutes until browned.
Melting the Cheese
  1. Reduce heat to low, layer provolone cheese over beef, cover with a lid for 1-2 minutes to melt the cheese.
Assembling the Roll-Ups
  1. Take a tortilla and spoon the beef-cheese mixture onto it. Roll it tightly to secure the filling.
Cooking the Roll-Ups
  1. Return the roll-ups seam-side down to the skillet and cook for 3-4 minutes until golden and crispy.

Notes

For added flavor, serve with dipping sauces such as ranch dressing or marinara. Store leftovers in an airtight container for 3-4 days.
