Preparation
- Gather and prep all ingredients including chopping bell peppers and onion.
Cooking the Vegetables
- In a skillet, heat olive oil over medium heat. Add chopped onions and bell peppers. Sauté for 5-7 minutes until softened.
Cooking the Beef
- Increase heat to medium-high and add the beef, seasoning with salt and pepper. Cook for about 3-5 minutes until browned.
Melting the Cheese
- Reduce heat to low, layer provolone cheese over beef, cover with a lid for 1-2 minutes to melt the cheese.
Assembling the Roll-Ups
- Take a tortilla and spoon the beef-cheese mixture onto it. Roll it tightly to secure the filling.
Cooking the Roll-Ups
- Return the roll-ups seam-side down to the skillet and cook for 3-4 minutes until golden and crispy.
