Preparation
- Slice the beef into thin strips, ensuring uniformity for even cooking.
- Chop the mixed bell peppers and the sweet onion.
Cooking
- In a large skillet, pour in the olive oil and heat over medium heat.
- Add the chopped onions and bell peppers to the skillet and sauté for about 5-7 minutes until soft.
- Increase heat to medium-high, add the sliced beef, and season with salt and pepper. Cook for about 3-5 minutes until the beef is browned.
- Reduce heat to low, place the provolone cheese over the beef and vegetable mixture, cover, and let it melt for 2-3 minutes.
- Scoop the beef-cheese mixture onto each tortilla, roll them tightly, tucking in the sides.
- Return the skillet to medium heat, place the roll-ups seam side down, and cook for about 3-4 minutes until golden brown on all sides.
