  • 1 lb thinly sliced ribeye or sirloin beef Choose high-quality beef.
  • 8 oz provolone cheese, sliced You can also use mozzarella or cheddar.
  • 1 cup mixed bell peppers, chopped Use any combination of red, green, or yellow bell peppers.
  • 1 medium sweet onion, chopped
  • 2 tbsp extra virgin olive oil
  • 4 pieces low-carb tortillas Ensure they are gluten-free if needed.

Preparation
  1. Slice the beef into thin strips, ensuring uniformity for even cooking.
  2. Chop the mixed bell peppers and the sweet onion.
Cooking
  1. In a large skillet, pour in the olive oil and heat over medium heat.
  2. Add the chopped onions and bell peppers to the skillet and sauté for about 5-7 minutes until soft.
  3. Increase heat to medium-high, add the sliced beef, and season with salt and pepper. Cook for about 3-5 minutes until the beef is browned.
  4. Reduce heat to low, place the provolone cheese over the beef and vegetable mixture, cover, and let it melt for 2-3 minutes.
  5. Scoop the beef-cheese mixture onto each tortilla, roll them tightly, tucking in the sides.
  6. Return the skillet to medium heat, place the roll-ups seam side down, and cook for about 3-4 minutes until golden brown on all sides.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet or microwave.
