  • 1 tablespoon olive oil For cooking the chicken.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • to taste salt and pepper
Vegetables
  • 1 cup diced bell peppers Mixed colors for a vibrant look.
  • 1 cup canned diced tomatoes Include juice from the can.
Toppings
  • 1 cup shredded cheese Cheddar or Mexican blend.

Method
 

Preparation
  1. Clean the chicken breasts and pat them dry with a paper towel.
  2. In a small bowl, mix the garlic powder, onion powder, cumin, chili powder, smoked paprika, salt, and pepper. Rub this spice mix all over the chicken breasts.
Cooking
  1. In a large skillet or frying pan, heat the olive oil over medium heat. Add the seasoned chicken breasts and cook for about 6-7 minutes on each side until golden brown and cooked through.
  2. Remove the chicken from the pan and set it aside. In the same pan, add the diced bell peppers and canned tomatoes. Cook for about 5 minutes until the peppers are soft.
  3. Slice the cooked chicken breasts and return them to the pan. Stir and let everything cook together for an additional 2-3 minutes.
  4. Sprinkle shredded cheese over the top, cover with a lid, and let it sit for a few minutes until melted.
  5. Serve hot, garnished with fresh cilantro.

Notes

This dish can be served in various ways, such as on a plate, in lettuce wraps, with cauliflower rice, or taco style in low-carb tortillas. Adjust spices based on heat preference.
