John Wayne Casserole

Ingredients
  

Main Ingredients
  • 1 lb ground beef Browned in a skillet.
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 1 packet taco seasoning
Toppings
  • 1 cup shredded cheddar cheese
  • 1 cup crushed tortilla chips
  • 1 cup sour cream Spread on top before baking.
Vegetables
  • 1/2 cup chopped onion Use fresh for better flavor.
  • 1/2 cup chopped green bell pepper

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, brown the ground beef over medium heat. Drain any excess fat.
  3. Add the chopped onion and green bell pepper and cook until tender, about 5 to 7 minutes.
  4. Stir in the kidney beans, diced tomatoes, tomato sauce, and taco seasoning. Simmer for about 5 minutes.
Layering
  1. In a casserole dish, layer half of the beef mixture, then half of the crushed tortilla chips, and half of the shredded cheddar cheese.
  2. Repeat with the remaining beef mixture, tortilla chips, and cheese.
  3. Spread sour cream on top of the final layer.
Baking
  1. Bake in the preheated oven for 25-30 minutes until the cheese is melted and bubbly.
  2. Let cool slightly before serving.

Notes

Serve with a side salad or Mexican-style rice. Toppings can include green onions, jalapeños, or extra sour cream.
