Preparation
- Preheat the oven to 350°F (175°C).
- In a large skillet, brown the ground beef over medium heat. Drain any excess fat.
- Add the chopped onion and green bell pepper and cook until tender, about 5 to 7 minutes.
- Stir in the kidney beans, diced tomatoes, tomato sauce, and taco seasoning. Simmer for about 5 minutes.
Layering
- In a casserole dish, layer half of the beef mixture, then half of the crushed tortilla chips, and half of the shredded cheddar cheese.
- Repeat with the remaining beef mixture, tortilla chips, and cheese.
- Spread sour cream on top of the final layer.
Baking
- Bake in the preheated oven for 25-30 minutes until the cheese is melted and bubbly.
- Let cool slightly before serving.
Notes
Serve with a side salad or Mexican-style rice. Toppings can include green onions, jalapeños, or extra sour cream.
