  • 1 package Jiffy corn muffin mix
  • 1 can whole kernel corn, drained
  • 1 can cream-style corn
  • 1 cup sour cream Fresh sour cream is recommended for best flavor.
  • 1/2 cup melted butter
  • 1 cup shredded cheese (optional) Cheddar, Monterey Jack, or pepper jack can be used.
  • 1/4 cup chopped green onions (optional)

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the Jiffy corn muffin mix, whole kernel corn, cream-style corn, sour cream, and melted butter.
  3. Stir until well combined.
  4. If desired, fold in the cheese and green onions.
  5. Pour the mixture into a greased 9×13-inch baking dish.
Baking
  1. Bake for 45-55 minutes or until golden brown and set in the center.
  2. Let cool slightly before serving.

Notes

For serving, cut the casserole into squares. It pairs well with turkey, ham, or roast beef. You can add toppings such as extra green onions, sour cream, or hot sauce. Leftovers can be stored in the refrigerator for 3-5 days or frozen for up to 3 months.
